- ½ cup cooked cauliflower chopped
- ¼ cup ricotta cheese
- 2 tbsp shredded mozzarella
- 1 tbsp grated Parmesan
- ¼ tsp garlic powder
- Salt & pepper to taste
- Steam or microwave cauliflower until soft. Chop or mash. 
- Mix cauliflower, ricotta, mozzarella, Parmesan, garlic powder, salt, and pepper in a bowl. 
- Microwave for 90 seconds to 2 minutes until heated through and bubbly. 
- (Optional) Broil for 1–2 minutes to brown the top. 
- Serve hot and enjoy!
