Allan
These Air Fryer Butternut Squash Halves are tender, naturally sweet, and seasoned with olive oil, garlic, paprika, and herbs. Air fry at 375°F (190°C) for approximately 25–35 minutes, adjusting the time according to size until the thickest part is fork-tender. Serve them as a simple side dish or scoop out the flesh for soups and meal prep. For keto meals, keep portions measured because butternut squash contains a significant amount of carbohydrates.

- 1 medium butternut squash about 900 g–1.2 kg whole
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon fine salt or to taste
- ¼ teaspoon black pepper
- ¼ teaspoon dried rosemary or thyme optional
- A pinch of ground cinnamon optional
- 1 teaspoon chopped fresh parsley optional for serving
Wash and thoroughly dry the butternut squash. Place it on a stable cutting board and carefully cut it lengthwise into two halves using a sharp knife.
Scoop out the seeds and stringy fibers from both halves with a sturdy spoon.
In a small bowl, combine the olive oil, garlic powder, paprika, salt, black pepper, and optional dried herbs.
Brush the seasoned oil evenly over the exposed flesh of both squash halves. Add a pinch of cinnamon if you prefer a slightly sweeter flavor.
Preheat the air fryer to 375°F (190°C) for 3–5 minutes, following your appliance's instructions.
Place the squash halves in the basket with the cut side facing up. Cook in a single layer, leaving enough room for air to circulate.
Air fry at 375°F (190°C) for 25–35 minutes. Begin checking around 25 minutes, as cooking time depends on the squash's size and thickness.
Insert a fork into the thickest part of the flesh. If it is still firm, continue cooking in 3–5-minute increments until tender.
If the flesh is tender but needs more browning, increase the temperature to 400°F (205°C) and cook for another 2–3 minutes, watching closely.
Carefully remove the squash and let it rest for 3–5 minutes. Garnish with parsley if desired, then serve whole or scoop out the flesh.
