- 1.2 kg bone-in skin-on chicken pieces
- 2 eggs + 2 tbsp heavy cream
- 100 g almond flour
- 60 g crushed pork rinds
- 2 tsp baking powder
- 2 tsp smoked paprika 1 tsp garlic powder, 1 tsp onion powder, ½ tsp cayenne (opt.)
- 2 tbsp olive oil for spraying, salt & pepper
Pat chicken dry and season.
Whisk eggs + cream; dip chicken.
Press into almond flour + pork rinds + spice mix. Chill 10–15 min.
