- 450 g 1 lb sirloin steak, cubed (1-inch pieces)
- 300 g 10 oz baby potatoes, quartered
- 2 tbsp olive oil divided
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt + ½ tsp black pepper
- 3 tbsp unsalted butter
- 3 garlic cloves minced
- 1 tbsp parsley chopped
- Optional: turkey bacon bits Parmesan, chili flakes
Preheat air fryer to 200°C / 392°F for 3 minutes.
Season potatoes: Toss baby potatoes with 1 tbsp olive oil, paprika, garlic powder, onion powder, salt, and pepper.
Cook potatoes: Place in air fryer basket and cook 200°C / 392°F for 12 minutes, shaking halfway.
Season steak: Toss steak cubes with 1 tbsp olive oil, salt, and pepper.
Add steak: After potatoes cook 12 minutes, push them to one side and add steak cubes in single layer. Cook for 6–8 minutes more, shaking halfway, until steak reaches 63°C / 145°F for medium-rare.
Make garlic butter: Melt butter in a pan with minced garlic until fragrant (2 minutes). Stir in parsley.
Toss and finish: Combine steak and potatoes in a bowl with garlic butter. Toss gently, then optionally return to air fryer for 1 minute at 205°C / 400°F to caramelize.
Serve hot, garnished with extra parsley or Parmesan.
