- 2 cups mashed potatoes cold, leftovers preferred
- 1 large egg
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked chicken or turkey bacon optional
- 2 tbsp flour or almond flour
- 2 green onions chopped
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- Olive oil spray
- Preheat air fryer to 200°C (390°F) for 3 minutes. 
- In a bowl, mix potatoes, egg, cheese, chicken (if using), flour, onions, and seasonings. 
- Shape mixture into 12 fritters (about 2 tbsp each). Chill for 10–15 minutes. 
- Spray air fryer basket with oil and place fritters in a single layer. 
- Cook at 200°C (390°F) for 8–10 minutes, flipping halfway. 
- For extra crispiness, cook 2 more minutes at 205°C (400°F). 
- Serve hot with your favorite dipping sauce.
