Ingredients
  

  • 2 cups mashed potatoes cold, leftovers preferred
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked chicken or turkey bacon optional
  • 2 tbsp flour or almond flour
  • 2 green onions chopped
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • Olive oil spray

Instructions
 

  • Preheat air fryer to 200°C (390°F) for 3 minutes.
  • In a bowl, mix potatoes, egg, cheese, chicken (if using), flour, onions, and seasonings.
  • Shape mixture into 12 fritters (about 2 tbsp each). Chill for 10–15 minutes.
  • Spray air fryer basket with oil and place fritters in a single layer.
  • Cook at 200°C (390°F) for 8–10 minutes, flipping halfway.
  • For extra crispiness, cook 2 more minutes at 205°C (400°F).
  • Serve hot with your favorite dipping sauce.
