  • 2 large cucumbers
  • 1 cup Greek yogurt
  • 2 tbsp fresh dill
  • 2 tbsp parsley
  • 1 garlic clove
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Start by washing the cucumbers thoroughly under cold running water to remove any dirt or residue. Pat them completely dry using a clean kitchen towel or paper towels—this step is important so the yogurt topping doesn’t slide off later. Place the cucumbers on a cutting board and slice them into thick, even rounds (about ½ inch thick). Try to keep the slices uniform so they hold the topping well and look visually appealing when served.
  • In a medium mixing bowl, add the Greek yogurt, finely chopped dill, chopped parsley, minced garlic, fresh lemon juice, olive oil, salt, and black pepper. Use a spoon or whisk to mix everything together until the texture becomes smooth, creamy, and well combined. Make sure the herbs and garlic are evenly distributed throughout the yogurt so every bite has balanced flavor.
  • Once mixed, let the yogurt mixture rest for about 5–10 minutes at room temperature. This short resting time allows the garlic and herbs to infuse into the yogurt, enhancing the overall flavor and making it taste more cohesive and rich.
  • While the mixture rests, neatly arrange the cucumber slices on a serving plate or platter. Lay them out in a single layer with a little space between each slice so they’re easy to assemble and serve without crowding.
  • Using a spoon, gently add a small dollop of the yogurt mixture onto each cucumber slice. Spread it slightly but avoid overloading—just enough to cover the top while keeping the bite easy to pick up and eat.
  • Lightly drizzle a small amount of extra virgin olive oil over the assembled cucumber bites for added richness and a glossy finish. Then sprinkle a little extra chopped dill or parsley on top for freshness and presentation.
