Place the mozzarella pearls or cubes onto a small tray or plate lined with parchment paper, making sure the pieces are not touching each other. Transfer them to the freezer for about 20–30 minutes until firm but not frozen solid. This step is extremely important because chilled cheese holds its shape much better during air frying and helps prevent the centers from melting too quickly and leaking out of the coating.
While the cheese chills, prepare the crispy coating mixture. In a medium mixing bowl, combine the whole wheat breadcrumbs, almond flour, grated Parmesan, oregano, smoked paprika, turmeric, garlic powder, and black pepper. Stir everything together thoroughly so the seasonings are evenly distributed throughout the coating. The mixture should smell savory, slightly smoky, and warm from the Mediterranean herbs and spices.
Crack the egg into a separate bowl and whisk until completely smooth. The egg acts as the binding layer that helps the breadcrumb coating stick evenly to the mozzarella pieces.
Remove the chilled mozzarella from the freezer. Working one piece at a time, dip each mozzarella piece into the beaten egg until fully coated. Allow any excess egg to drip off gently before placing it into the breadcrumb mixture.
Roll the mozzarella thoroughly in the breadcrumb mixture, pressing lightly so the coating sticks well on all sides. Make sure there are no exposed spots because uncovered cheese can burst open during cooking.
For extra crispy cheese bites and better protection against leaking, repeat the coating process a second time if desired. Dip the coated mozzarella back into the egg, then roll again in the breadcrumb mixture. Double coating creates a thicker, crunchier crust that becomes beautifully golden in the air fryer.
Preheat the air fryer to 375°F for several minutes. Preheating helps the cheese bites start crisping immediately once they hit the basket, which improves texture and prevents sogginess.
Lightly spray the air fryer basket with olive oil spray to help prevent sticking. A thin coating is all you need — too much oil can make the breadcrumb coating greasy instead of crisp.
Arrange the cheese bites in a single layer inside the air fryer basket, leaving a little space between each piece so the hot air can circulate properly. Avoid overcrowding because crowded cheese bites steam instead of crisping evenly.
Lightly spray the tops of the cheese bites with olive oil spray. This helps the coating turn beautifully golden brown while creating that crunchy air-fried texture without deep frying.
Air fry the cheese bites for about 6–8 minutes, watching carefully during the final few minutes. The outside should become deeply golden and crispy while the inside turns warm, soft, and melty. Since mozzarella melts quickly, avoid overcooking or the cheese may burst through the coating.
Carefully remove the cheese bites from the air fryer and let them cool for 1–2 minutes before serving. The centers will be extremely hot straight from the basket. Serve warm with Mediterranean dipping sauces like Greek yogurt dip, hummus, tzatziki, or roasted red pepper dip for the best flavor and texture.
