  • In a large mixing bowl, combine the whole wheat flour, turmeric powder, baking powder, and salt. Whisk everything together thoroughly so the turmeric and baking powder distribute evenly throughout the flour. The turmeric will give the mixture a beautiful warm golden color and a subtle earthy aroma right away.
  • Add the Greek yogurt and olive oil to the dry ingredients. Using a spoon or your hands, begin mixing everything together until a rough dough starts to form. The yogurt helps create a soft and tender flatbread texture while the olive oil adds richness and keeps the dough from feeling dry.
  • If the dough looks too dry or crumbly, add warm water gradually, about one tablespoon at a time, while continuing to mix. Be careful not to add too much at once. The goal is a soft, slightly tacky dough that feels smooth and easy to handle without sticking heavily to your hands.
  • Transfer the dough onto a lightly floured surface and knead it gently for about 3–5 minutes. Press and fold the dough repeatedly until it becomes smooth, soft, and slightly elastic. Proper kneading helps create tender flatbread that stays soft after cooking.
  • Place the dough back into the bowl and cover it with a clean kitchen towel or plate. Let it rest for 15–20 minutes at room temperature. This resting time allows the flour to fully hydrate and helps relax the dough, making it easier to roll out while improving the final texture.
  • Divide the rested dough into equal small portions and roll each piece into a ball using your hands. Lightly flour the surface and use a rolling pin to flatten each dough ball into thin round flatbreads. Try to keep the thickness even so they cook uniformly in the skillet.
  • Heat a large skillet or cast-iron pan over medium-high heat until properly hot. A hot skillet helps create those beautiful golden brown spots and slightly puffy texture that make homemade flatbread so delicious.
  • Place one rolled flatbread into the hot dry skillet and cook for about 1–2 minutes on the first side. You’ll notice bubbles forming and golden brown spots appearing. Flip carefully and cook the other side for another 1–2 minutes until both sides are lightly charred, golden, and fully cooked through.
  • Transfer the cooked flatbread to a plate and immediately cover it with a clean kitchen towel to keep it soft and warm. Continue cooking the remaining flatbreads the same way, stacking them under the towel until ready to serve.
