Ingredients
  

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 small apple finely diced
  • Optional: 1–2 tbsp chia or flaxseeds

Instructions
 

  • Preheat oven to 350°F; line muffin tin.
  • Whisk dry ingredients in a bowl.
  • Mix wet ingredients in a separate bowl.
  • Fold wet into dry ingredients gently.
  • Add diced apple and seeds.
  • Spoon into muffin cups (3/4 full).
  • Bake 18–22 minutes; cool 5–10 minutes.
