Ingredients
  

  • 2 medium acorn squash
  • 1 cup low-fat cottage cheese
  • 1 cup shredded pepper jack cheese
  • 1 cup chopped fresh spinach
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tsp olive oil

Instructions
 

  • Preheat oven to 400°F.
  • Slice acorn squash, remove seeds, brush with olive oil, season.
  • Mix cottage cheese, shredded cheese, spinach, garlic powder, smoked paprika, salt, and pepper.
  • Stuff squash halves evenly with filling.
