Ingredients
  

  • 2 medium zucchinis
  • 2 cups cooked shredded chicken
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1 cup low-sugar marinara sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Cooking spray

Instructions
 

  • Spiralize zucchinis into noodles; sprinkle with salt and set aside.
  • Mix shredded chicken with ricotta, garlic powder, Italian seasoning, salt, and pepper.
  • Lay 2–3 zucchini strips, spoon chicken mixture, and roll.
  • Spray baking dish, pour a thin layer of marinara, and place roll-ups seam-side down.
  • Cover with remaining sauce; top with mozzarella and Parmesan.
  • Bake covered at 375°F for 20–25 minutes; uncover and bake 5–10 minutes.
  • Let cool 5 minutes before serving; garnish with fresh basil.
