- 2 medium zucchini
- 2 cups cooked chicken breast
- 1 cup reduced-fat mozzarella
- ½ cup cottage cheese or ricotta
- ½ cup marinara sauce sugar-free
- 2 garlic cloves
- 1 tsp Italian seasoning
- Salt & pepper
Preheat oven to 375°F (190°C).
Spiralize zucchini, salt, and drain for 10 minutes. Pat dry.
In skillet, sauté garlic and chicken with seasoning.
Mix cottage cheese and marinara to make sauce.
Layer zoodles, chicken, sauce in baking dish. Top with mozzarella.
Bake 20–25 minutes until bubbly and golden.
