Ingredients
  

  • 2 medium zucchini
  • 2 cups cooked chicken breast
  • 1 cup reduced-fat mozzarella
  • ½ cup cottage cheese or ricotta
  • ½ cup marinara sauce sugar-free
  • 2 garlic cloves
  • 1 tsp Italian seasoning
  • Salt & pepper

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Spiralize zucchini, salt, and drain for 10 minutes. Pat dry.
  • In skillet, sauté garlic and chicken with seasoning.
  • Mix cottage cheese and marinara to make sauce.
  • Layer zoodles, chicken, sauce in baking dish. Top with mozzarella.
  • Bake 20–25 minutes until bubbly and golden.
  • Let rest 5 minutes before serving.
