Ingredients
  

  • 2 lbs chicken breasts
  • 1 onion diced
  • 3 garlic cloves minced
  • 1- inch ginger grated
  • 1 cup light coconut milk
  • ½ cup Greek yogurt
  • 2 tbsp curry powder
  • 1 tsp cumin
  • ½ tsp paprika
  • Salt pepper
  • Cilantro

Instructions
 

  • Place chicken in crockpot.
  • Mix coconut milk, yogurt, spices, garlic, ginger, and onion in a bowl.
  • Pour sauce over chicken.
  • Cook on low 6–7 hours (or high 3–4).
