Ingredients
  

  • 1 lb chicken breast cubed
  • 1 cup shredded carrots
  • 1 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 2 cloves garlic minced
  • 1 tbsp low-sodium soy sauce or tamari
  • 1 tsp sesame oil
  • 1 tsp fresh grated ginger
  • 1/2 tsp chili flakes optional
  • 8 –10 large lettuce leaves

Instructions
 

  • Prep vegetables and chicken.
  • Heat skillet with sesame oil, sauté garlic & ginger.
  • Cook chicken until no longer pink.
  • Add vegetables, soy sauce, and chili flakes; stir-fry 2–3 minutes.
  • Spoon mixture onto lettuce leaves and fold. Serve immediately.
