- 1 lb chicken breast cubed
- 1 cup shredded carrots
- 1 cup diced bell peppers
- 1/4 cup chopped green onions
- 2 cloves garlic minced
- 1 tbsp low-sodium soy sauce or tamari
- 1 tsp sesame oil
- 1 tsp fresh grated ginger
- 1/2 tsp chili flakes optional
- 8 –10 large lettuce leaves
Prep vegetables and chicken.
Heat skillet with sesame oil, sauté garlic & ginger.
Cook chicken until no longer pink.
Add vegetables, soy sauce, and chili flakes; stir-fry 2–3 minutes.
Spoon mixture onto lettuce leaves and fold. Serve immediately.
