- 6 large eggs
- ½ cup low-fat cottage cheese
- ½ cup chopped spinach
- 2 slices turkey or chicken bacon cooked & chopped
- ¼ cup diced bell peppers
- 2 tbsp diced onions
- Salt & pepper to taste
- 1 tsp olive oil optional
Preheat oven to 375°F (190°C). Grease muffin tin.
Sauté onions, peppers, and spinach in olive oil until soft. Cook bacon separately.
Whisk eggs and cottage cheese in a bowl; season with salt and pepper.
Fold in sautéed veggies and bacon gently.
Pour mixture into muffin cups, filling ¾ full.
Bake 18–22 minutes until set. Toothpick should come out clean.
Cool 5 minutes, then remove and serve.
