Ingredients
  

  • 6 large eggs
  • ½ cup low-fat cottage cheese
  • ½ cup chopped spinach
  • 2 slices chicken or turkey bacon cooked & chopped
  • ¼ cup diced bell peppers
  • 2 tbsp diced onions
  • Salt & pepper to taste
  • 1 tsp olive oil optional

Instructions
 

  • Preheat oven to 375°F (190°C) and grease baking dish.
  • Sauté onions, bell peppers, and spinach until soft. Cook bacon separately.
  • Whisk eggs and cottage cheese; season with salt and pepper.
  • Fold in sautéed vegetables and bacon gently.
  • Pour mixture into baking dish and smooth top.
  • Bake 20–25 minutes until set. Toothpick should come out clean.
  • Cool 5–10 minutes before cutting and serving.
