- 6 large eggs
- ½ cup low-fat cottage cheese
- ½ cup chopped spinach
- 2 slices chicken or turkey bacon cooked & chopped
- ¼ cup diced bell peppers
- 2 tbsp diced onions
- Salt & pepper to taste
- 1 tsp olive oil optional
Preheat oven to 375°F (190°C) and grease baking dish.
Sauté onions, bell peppers, and spinach until soft. Cook bacon separately.
Whisk eggs and cottage cheese; season with salt and pepper.
Fold in sautéed vegetables and bacon gently.
Pour mixture into baking dish and smooth top.
Bake 20–25 minutes until set. Toothpick should come out clean.
Cool 5–10 minutes before cutting and serving.
