Ingredients
  

  • ½ cup rolled oats
  • ¼ cup pumpkin puree
  • 2 tbsp low-fat cottage cheese
  • 1 scoop protein powder
  • ¾ cup unsweetened almond milk
  • ½ tsp cinnamon
  • tsp nutmeg
  • 1 –2 tsp low-carb sweetener optional
  • ½ tsp vanilla extract

Instructions
 

  • Combine oats, pumpkin puree, almond milk, cinnamon, and nutmeg in saucepan.
  • Cook on medium heat 5–7 minutes until oats are tender.
  • Reduce heat; stir in cottage cheese and protein powder until smooth.
  • Add sweetener and vanilla extract; stir gently.
  • Serve warm, topped with cinnamon, nuts, or pumpkin seeds if desired.
