- ½ cup rolled oats
- ¼ cup pumpkin puree
- 2 tbsp low-fat cottage cheese
- 1 scoop protein powder
- ¾ cup unsweetened almond milk
- ½ tsp cinnamon
- ⅛ tsp nutmeg
- 1 –2 tsp low-carb sweetener optional
- ½ tsp vanilla extract
Combine oats, pumpkin puree, almond milk, cinnamon, and nutmeg in saucepan.
Cook on medium heat 5–7 minutes until oats are tender.
Reduce heat; stir in cottage cheese and protein powder until smooth.
