- 1 cup almond flour
- 1 scoop vanilla protein powder
- 1/3 cup Greek yogurt
- 3 large eggs
- 1/2 cup lemon juice
- 1 tbsp lemon zest
- 1/2 cup sugar substitute
- 1/2 tsp baking powder
- Pinch of salt
Preheat oven to 350°F. Line 8x8 pan with parchment.
Mix almond flour, protein powder, yogurt, baking powder, and salt. Press into pan. Bake 8–10 mins.
Whisk eggs, lemon juice, zest, and sweetener. Pour over crust.
Bake 20–25 mins until set but slightly jiggly.
Cool completely, chill 2 hrs, slice and serve.
