Ingredients
  

  • 1 cup almond flour
  • 1 scoop vanilla protein powder
  • 1/3 cup Greek yogurt
  • 3 large eggs
  • 1/2 cup lemon juice
  • 1 tbsp lemon zest
  • 1/2 cup sugar substitute
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F. Line 8x8 pan with parchment.
  • Mix almond flour, protein powder, yogurt, baking powder, and salt. Press into pan. Bake 8–10 mins.
  • Whisk eggs, lemon juice, zest, and sweetener. Pour over crust.
  • Bake 20–25 mins until set but slightly jiggly.
  • Cool completely, chill 2 hrs, slice and serve.
