Ingredients
  

  • 6 large eggs
  • ½ cup low-fat cottage cheese blended
  • ½ cup shredded Mexican cheese blend
  • 1 small zucchini diced
  • 1 red bell pepper diced
  • ½ cup onion diced
  • 1 jalapeño diced
  • 2 tbsp cilantro
  • ½ tsp cumin + ½ tsp chili powder
  • Salt & pepper

Instructions
 

  • Preheat oven to 375°F. Grease skillet.
  • Sauté onion, zucchini, bell pepper, and jalapeño until softened.
  • In bowl, whisk eggs, cottage cheese, shredded cheese, and spices.
  • Pour egg mixture into skillet, stir gently.
  • Bake 18–22 minutes until set.
  • Rest 5 minutes, slice, garnish with cilantro, serve warm.
