- 6 large eggs
- ½ cup low-fat cottage cheese blended
- ½ cup shredded Mexican cheese blend
- 1 small zucchini diced
- 1 red bell pepper diced
- ½ cup onion diced
- 1 jalapeño diced
- 2 tbsp cilantro
- ½ tsp cumin + ½ tsp chili powder
- Salt & pepper
Preheat oven to 375°F. Grease skillet.
Sauté onion, zucchini, bell pepper, and jalapeño until softened.
In bowl, whisk eggs, cottage cheese, shredded cheese, and spices.
Pour egg mixture into skillet, stir gently.
Bake 18–22 minutes until set.
Rest 5 minutes, slice, garnish with cilantro, serve warm.
