Ingredients
  

  • 2 large eggs
  • ½ cup cocoa powder
  • ½ cup sugar-free sweetener
  • ¼ cup protein powder
  • 2 tbsp sugar-free chocolate chips
  • 1 tsp peppermint extract
  • 1 tsp espresso powder
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheet.
  • Mix cocoa, protein powder, espresso, salt.
  • Whisk eggs + sweetener. Stir in peppermint.
  • Combine wet + dry. Fold in chocolate chips.
  • Scoop dough onto sheet.
  • Bake 9–11 min. Cool & enjoy.
