- 2 large eggs
- ½ cup cocoa powder
- ½ cup sugar-free sweetener
- ¼ cup protein powder
- 2 tbsp sugar-free chocolate chips
- 1 tsp peppermint extract
- 1 tsp espresso powder
- Pinch of salt
Preheat oven to 350°F (175°C). Line baking sheet.
Mix cocoa, protein powder, espresso, salt.
Whisk eggs + sweetener. Stir in peppermint.
Combine wet + dry. Fold in chocolate chips.
