Ingredients
  

  • 1 tbsp olive oil
  • 1 onion diced
  • 1 red bell pepper diced
  • 2 garlic cloves minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ¼ tsp chili flakes optional
  • 1 can 14 oz crushed tomatoes
  • Salt & pepper
  • 4 large eggs
  • Fresh parsley or cilantro

Instructions
 

  • Heat oil in skillet, sauté onion and bell pepper until soft.
  • Add garlic and spices, cook 1–2 minutes.
  • Stir in tomatoes, simmer 10–12 minutes.
  • Make 4 wells in sauce, crack eggs into each.
  • Cover and cook 5–7 minutes until eggs are set.
  • Garnish with parsley or cilantro, serve hot.
