- 1 tbsp olive oil
- 1 onion diced
- 1 red bell pepper diced
- 2 garlic cloves minced
- 1 tsp cumin
- 1 tsp smoked paprika
- ¼ tsp chili flakes optional
- 1 can 14 oz crushed tomatoes
- Salt & pepper
- 4 large eggs
- Fresh parsley or cilantro
Heat oil in skillet, sauté onion and bell pepper until soft.
Add garlic and spices, cook 1–2 minutes.
Stir in tomatoes, simmer 10–12 minutes.
Make 4 wells in sauce, crack eggs into each.
Cover and cook 5–7 minutes until eggs are set.
Garnish with parsley or cilantro, serve hot.
