Ingredients
  

  • 1 lb lean ground turkey
  • 1 small onion finely chopped
  • 1 garlic clove minced
  • 1 cup diced bell pepper
  • 1 cup riced cauliflower
  • 2 tbsp tomato paste
  • 2 tbsp plain nonfat Greek yogurt
  • 8 low-carb tortillas 6–7 inch
  • 1 egg beaten, for wash
  • ½ tsp smoked paprika ½ tsp cumin, salt & pepper
  • 2 tbsp shredded low-fat cheese optional

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Sauté onion and garlic; add turkey and brown.
  • Stir in peppers, cauliflower, spices, tomato paste; cook until thick. Remove from heat and cool slightly; stir in Greek yogurt.
  • Spoon ~3 tbsp filling onto each tortilla; fold and crimp edges.
  • Place on a parchment-lined sheet, brush with egg wash, and bake 12–15 minutes until golden.
  • Cool 3–4 minutes, serve 2 per plate.
