Ingredients
  

  • 2 medium zucchinis spiralized
  • 1 lb chicken breast sliced
  • 1 tbsp olive oil
  • 1 bell pepper sliced
  • 1 carrot julienned
  • 2 cloves garlic
  • 1- inch ginger
  • 3 tbsp low-sodium soy sauce
  • 1 tsp rice vinegar
  • 1 tsp chili flakes optional

Instructions
 

  • Spiralize zucchini, slice chicken, prep veggies.
  • Whisk together sauce ingredients.
  • Cook chicken in oil until golden, remove.
  • Stir-fry peppers and carrots until crisp-tender.
  • Add zoodles and sauce, toss 2–3 minutes.
