Ingredients
  

  • 1 large head of cauliflower (cut into small florets)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sour cream
  • 1/4 cup double cream
  • 8 oz cream cheese (softened)
  • 3 garlic cloves (finely chopped)
  • 1 tbsp butter melted
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Chopped fresh chives (for garnish, optional)

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a baking dish with butter.
  • Steam or boil the cauliflower florets until tender but firm (about 5-7 minutes). Drain thoroughly.
  • In a large bowl, combine the cream cheese, sour cream, double cream, garlic, onion powder, salt, and pepper. Stir in half of the cheddar, all of the mozzarella, and half of the parmesan cheese.
  • Gently toss the cooked cauliflower in the cheese mixture, making sure it’s evenly coated.
  • Transfer the cauliflower mixture into the greased baking dish and spread it out evenly. Top with the remaining cheddar and parmesan cheese.
  • Bake for 20-25 minutes, or until bubbly and golden on top.
  • Garnish with chopped fresh chives, if desired. Serve hot.
