Ingredients
  

  • 6.5 oz clams drained
  • 2 cups heavy cream
  • 1 cup chicken or vegetable stock
  • 2 tbsp margarine
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup chopped cauliflower
  • 2 cloves garlic chopped
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions
 

  • In a large pot over medium heat, melt margarine. Add chopped celery, onion, garlic, and cauliflower. Stir and cook for about 5 minutes, until softened.
  • Add the clam juice and stock to the pot. Cover and let it simmer for another 5 minutes.
  • Stir in the heavy cream and clams. Continue to simmer on low heat for 10-15 minutes until the cauliflower is soft and the chowder thickens.
  • Taste and adjust the seasoning with salt and pepper as needed.
  • Pour the chowder into bowls and garnish with chopped parsley before serving.
