Ingredients
  

  • 245 g canned pumpkin puree 1 cup
  • 245 g plain nonfat Greek yogurt 1 cup
  • 200 g silken tofu
  • 60 g vanilla protein isolate 2 scoops
  • 2 tbsp erythritol or monk fruit blend adjust to taste
  • 1 tsp vanilla extract
  • tsp ground cinnamon ¼ tsp ground nutmeg, ⅛ tsp ground ginger, pinch salt
  • Optional: 1 tsp xanthan gum

Instructions
 

  • Warm 2 tbsp pumpkin with spices briefly; cool.
  • Blend remaining pumpkin, yogurt, tofu, protein powder, sweetener, vanilla, and spiced puree until smooth.
  • Adjust sweetness/spice; optionally strain for extra silkiness.
  • Divide into six small glasses; chill 1–2 hours. Serve cold.
