Pat the chicken wings thoroughly dry with paper towels. Separate whole wings into flats and drumettes if necessary.
Preheat the air fryer to 380°F (193°C) for 3–5 minutes, following your appliance's instructions.
In a small bowl, mix the baking powder, paprika, garlic powder, onion powder, cayenne pepper, salt, black pepper, and optional oregano.
Toss the wings with olive oil in a large bowl. Add the seasoning mixture and toss again until every wing is evenly coated.
Arrange the wings in a single layer in the air fryer basket, leaving space between the pieces. Cook in batches if necessary.
Air fry at 380°F (193°C) for 12–15 minutes.
Flip the wings with tongs and cook for another 10–15 minutes, until the skin is crisp and the thickest meaty sections reach at least 165°F (74°C).
For extra crispness, increase the temperature to 400°F (204°C) and cook for another 2–4 minutes, watching carefully.
If desired, toss the cooked wings with a small amount of hot sauce just before serving.
Transfer to a clean platter and serve immediately with your favorite low-carb dip and crunchy vegetables.
