Ingredients
  

  • Chicken breast or thighs 2 cups, shredded
  • Chicken broth 4 cups
  • Bell peppers 1 cup, diced
  • Zucchini 1 cup, diced
  • Diced tomatoes 1 cup
  • Onion 1 small
  • Garlic 3 cloves
  • Cumin 1 tsp
  • Paprika 1 tsp
  • Heavy cream 1/2 cup
  • Cilantro for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Sauté diced onions and minced garlic for 2-3 minutes.
  • Add diced bell peppers, zucchini, cumin, and paprika. Stir well.
  • Pour in chicken broth, and add diced tomatoes and shredded chicken.
  • Simmer for 20-25 minutes on medium-low heat.
  • Stir in heavy cream in the final minutes.
  • Serve hot with fresh cilantro garnish.
