- Chicken breast or thighs 2 cups, shredded
- Chicken broth 4 cups
- Bell peppers 1 cup, diced
- Zucchini 1 cup, diced
- Diced tomatoes 1 cup
- Onion 1 small
- Garlic 3 cloves
- Cumin 1 tsp
- Paprika 1 tsp
- Heavy cream 1/2 cup
- Cilantro for garnish
Heat olive oil in a large pot over medium heat.
