Ingredients

  • 16 ounces 450 g fresh white button or cremini mushrooms
  • 1 medium yellow onion about 150 g, sliced into ¼-inch strips
  • 1 tablespoon 15 ml olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley optional

Instructions

  • Preheat: Preheat the air fryer to 380°F (193°C) for approximately 3 minutes, unless your appliance doesn't require preheating.
  • Prepare the vegetables: Clean and thoroughly dry the mushrooms. Halve small mushrooms and quarter larger ones. Peel and slice the onion into strips approximately ¼ inch (6 mm) thick.
  • Season: Place the mushrooms and onions in a large mixing bowl. Add the olive oil, garlic powder, smoked paprika, thyme, salt, and black pepper. Toss until evenly coated.
  • Arrange: Spread the vegetables in a relatively even layer in the air fryer basket. Cook in batches if needed to avoid overcrowding.
  • Air fry: Cook at 380°F (193°C) for 12–16 minutes, shaking the basket after 6–7 minutes. Start checking at 10 minutes and continue until the mushrooms are tender and the onions are softened and browned around the edges.
  • Finish browning: If the vegetables need additional color, increase the temperature to 400°F (204°C) and cook for another 1–2 minutes, watching carefully.
  • Garnish and serve: Transfer to a serving dish, taste, adjust the seasoning, and sprinkle with fresh parsley if desired. Serve immediately.
