If the slices are slightly folded from the package, take a moment to flatten them carefully so the filling spreads evenly. Thin turkey slices work best because they roll tightly without tearing or becoming too bulky.
  • Using a butter knife or small spatula, spread the cream cheese evenly across each turkey slice in a thin layer. Try to cover most of the surface while leaving a tiny border around the edges so the filling doesn’t squeeze out when rolled. If your cream cheese feels too firm, let it sit at room temperature for a few minutes first so it spreads more smoothly and doesn’t tear the turkey.
  • Place a pickle spear or a few pickle strips near one edge of each turkey slice. If your pickles are very wet, lightly pat them dry with a paper towel first to prevent extra moisture from making the roll-ups slippery. Don’t overfill them — keeping the pickle centered helps the rolls stay tight and easier to eat.
  • Starting from the pickle side, carefully roll the turkey slices tightly around the filling until fully wrapped. Press gently as you roll to help everything stay secure. Once rolled, place them seam-side down on a microwave-safe plate so they hold their shape while heating. Don’t worry if they aren’t perfectly even — the melted cheese on top will make them look delicious either way.
  • Sprinkle the shredded mozzarella evenly over the top of the roll-ups, making sure some cheese falls along the sides for extra melty texture.
