2 large eggs 2 oz cream cheese 1-2 tbsp sweetener (optional) 1 tsp vanilla extract 1/2 tsp baking powder 1/4 tsp cinnamon (optional)
Whisk eggs and softened cream cheese in a bowl until smooth. Add sweetener, vanilla, baking powder, and cinnamon; mix well.
Heat a non-stick skillet over medium heat and lightly grease it.
Pour small circles of batter onto the skillet. Cook for 2-3 minutes until bubbles form.
Flip and cook for 1-2 minutes until golden. Repeat with remaining batter.
