Ingredients
  

  • 2 large eggs
  • 2 oz cream cheese
  • 1-2 tbsp sweetener (optional)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon (optional)

Instructions
 

  • Whisk eggs and softened cream cheese in a bowl until smooth. Add sweetener, vanilla, baking powder, and cinnamon; mix well.
  • Heat a non-stick skillet over medium heat and lightly grease it.
  • Pour small circles of batter onto the skillet. Cook for 2-3 minutes until bubbles form.
  • Flip and cook for 1-2 minutes until golden. Repeat with remaining batter.
  • Serve warm with your favorite toppings.
