- 2 cups steamed cauliflower rice squeezed dry
- 1 cup shredded mozzarella
- 2 tbsp grated Parmesan
- 2 large eggs
- ½ tsp garlic powder
- ½ tsp baking powder
- Salt and pepper
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Steam cauliflower rice and let cool slightly. Squeeze dry with towel or cheesecloth.
In a bowl, combine cauliflower, mozzarella, Parmesan, garlic powder, baking powder, salt, and pepper.
Whisk eggs separately and stir into the mixture. Mix until well combined.
Shape into 8 balls and place on baking sheet.
Bake for 20–25 minutes until golden and slightly firm.
