Ingredients
  

  • 1/2 cup plain Greek yogurt
  • 1/4 cup almond milk
  • 1 large egg (or flax egg substitute)
  • 1/2 cup almond flour (or 1/4 cup coconut flour)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granulated sweetener (e.g., erythritol or monk fruit)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup sugar-free chocolate chips or chopped nuts (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper and lightly grease it.
  • In a large bowl, whisk together the Greek yogurt, almond milk, egg, and vanilla extract until smooth and combined.
  • In another bowl, sift together the almond flour, cocoa powder, sweetener, baking powder, and a pinch of salt.
  • Gradually fold the dry ingredients into the wet ingredients until a thick batter forms. Be careful not to overmix! If you’d like, add in chocolate chips or nuts at this stage for an extra treat.
  • Pour the batter into the prepared pan, spreading it out evenly. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean. (A few moist crumbs are perfect for a fudgy brownie!)
  • Let the brownies cool in the pan for 10-15 minutes before slicing into squares.
