Ingredients
  

  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup blueberries
  • 1 –2 tbsp sweetener optional
  • 1 scoop whey protein optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease muffin tin.
  • Blend cottage cheese, eggs, vanilla, sweetener.
  • Add oat flour and baking powder, mix gently.
  • Fold in blueberries.
  • Spoon into molds, 3/4 full.
  • Bake 18–20 minutes; test with toothpick.
  • Cool 5 minutes, remove, serve warm.
