- 2 lb lean ground turkey
- 6 –8 roasted garlic cloves mashed
- ½ cup grated onion
- ½ cup grated squeezed zucchini
- 2 eggs
- ¼ cup Greek yogurt
- 1 cup shredded mozzarella divided
- ½ cup oat or almond flour
- 2 tbsp tomato paste
- 1 tbsp Worcestershire
- Salt pepper, paprika, parsley
Preheat oven to 375 °F (190 °C). Grease loaf pan.
Combine wet ingredients (garlic, onion, zucchini, yogurt, tomato paste, eggs, Worcestershire).
Add turkey, half cheese, oat flour, and seasonings; mix gently.
Shape loaf in pan, spread thin tomato glaze, top with rest of cheese.
