- 1 cup cottage cheese
- 2 ripe bananas
- 2 eggs
- 2 tbsp melted butter
- 1 cup almond flour
- ¼ cup vanilla protein powder
- 2 tbsp coconut flour
- 1 tsp baking powder
- 2 tbsp monk fruit
- ½ tsp cinnamon
- 3 tbsp almond milk
- 1 tsp vanilla extract
Preheat oven to 350°F (175°C) and line a 9x5-inch loaf pan.
Blend cottage cheese, bananas, eggs, butter, vanilla, and almond milk until smooth.
In a separate bowl, mix almond flour, protein powder, coconut flour, baking powder, cinnamon, salt, and sweetener.
Combine wet and dry ingredients. Mix gently.
Pour into the loaf pan.
Bake 45–50 minutes, until toothpick comes out clean.
Cool completely before slicing.
