Ingredients
  

  • 1 cup cottage cheese
  • 2 ripe bananas
  • 2 eggs
  • 2 tbsp melted butter
  • 1 cup almond flour
  • ¼ cup vanilla protein powder
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 2 tbsp monk fruit
  • ½ tsp cinnamon
  • 3 tbsp almond milk
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and line a 9x5-inch loaf pan.
  • Blend cottage cheese, bananas, eggs, butter, vanilla, and almond milk until smooth.
  • In a separate bowl, mix almond flour, protein powder, coconut flour, baking powder, cinnamon, salt, and sweetener.
  • Combine wet and dry ingredients. Mix gently.
  • Pour into the loaf pan.
  • Bake 45–50 minutes, until toothpick comes out clean.
  • Cool completely before slicing.
  • Store airtight in fridge (5 days) or freezer (2 months).
