Ingredients
  

  • 1 cup low-fat cottage cheese
  • 1/2 cup unsweetened cocoa powder
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/3 cup erythritol or stevia
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C) and line pan with parchment paper.
  • Blend cottage cheese until smooth.
  • Mix blended cottage cheese, eggs, vanilla, and sweetener.
  • Fold in cocoa, almond flour, and baking powder.
  • Optional: fold in chocolate chips.
  • Pour into pan, smooth, and bake 20–25 minutes.
  • Cool 10–15 minutes, slice, and serve.
