Ingredients
  

  • 1.5 lbs lean ground beef 90/10
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup bell peppers chopped
  • 1 cup mushrooms sliced
  • 2 cups shredded low-fat cheddar cheese
  • 1 cup Greek yogurt
  • 1 cup cooked quinoa optional
  • 1/2 cup low-sodium tomato sauce
  • 1 tsp paprika 1/2 tsp black pepper, 1 tsp oregano, salt to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Sauté onions and garlic in skillet until soft.
  • Brown ground beef; drain excess fat.
  • Mix Greek yogurt, cheese, and quinoa in a bowl.
  • Layer tomato sauce, beef, yogurt mixture, and cheese in a baking dish. Repeat layers.
  • Cover with foil; bake 25 minutes.
  • Remove foil; bake 10–15 minutes until cheese bubbles.
  • Let rest 5 minutes before slicing and serving.
