- 1.5 lbs lean ground beef 90/10
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 cup bell peppers chopped
- 1 cup mushrooms sliced
- 2 cups shredded low-fat cheddar cheese
- 1 cup Greek yogurt
- 1 cup cooked quinoa optional
- 1/2 cup low-sodium tomato sauce
- 1 tsp paprika 1/2 tsp black pepper, 1 tsp oregano, salt to taste

Sauté onions and garlic in skillet until soft.
