  • 2 tablespoons butter melted
  • 2 cloves garlic minced

  • ½ cup shredded mozzarella cheese
  • ¼ cup shredded cheddar cheese
  • Pinch of salt

  • Start by adding the melted butter into a small mixing bowl, then add the finely minced garlic, dried oregano, dried parsley, and a small pinch of salt. Stir everything slowly and thoroughly until the mixture looks smooth and glossy, and the garlic is evenly distributed throughout. Let it sit for about 30–60 seconds so the garlic can infuse into the butter, which will deepen the flavor.
  • Place your low-carb tortilla flat on a clean, dry surface such as a cutting board or plate. Using the back of a spoon or a brush, spread the garlic butter mixture evenly across the entire tortilla. Make sure to go all the way to the edges—this is key for achieving those perfectly crispy, golden edges instead of leaving them dry.
  • Take the shredded mozzarella cheese and sprinkle it evenly over the tortilla, making sure every area gets some coverage. Then add the shredded cheddar cheese on top, distributing it evenly so the flavors balance well. Lightly press the cheese down with your hand or spoon so it sticks slightly to the buttered surface and doesn’t fall off during cooking.
  • Carefully lift the prepared tortilla and place it into the air fryer basket. Make sure it sits completely flat without folding or curling up. If your air fryer tends to move lighter foods around, you can gently press the center or use a small rack (if available) to keep it stable.
  • Set your air fryer to 180°C and cook the tortilla for about 5 to 7 minutes. Around the 3–4 minute mark, open the air fryer and check the progress. This helps prevent over-browning, especially on the edges, which can crisp up quickly depending on your air fryer model.
  • Continue cooking until the cheese is fully melted, bubbling slightly, and just starting to turn light golden on top, while the edges of the tortilla become crisp and slightly browned. Once it reaches this stage, carefully remove it from the air fryer using tongs or a spatula to avoid breaking it.
  • Place the cooked tortilla on a flat surface and let it rest for 1 to 2 minutes. This short cooling time allows the melted cheese to set slightly, making it easier to slice cleanly without the toppings sliding off.
  • Using a sharp knife or pizza cutter, slice the tortilla into wedges, triangles, or strips—whichever you prefer. Cut gently but firmly to keep the toppings intact and create neat pieces.
