Ingredients
  

  • 1 cup  almond flour
  • 1/2 cup  coconut flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup erythritol
  • 1 tsp vanilla extract
  • Oil for frying (coconut or avocado oil)

Instructions
 

  • In a big bowl, combine the almond flour, coconut flour, baking powder, cinnamon, and salt. Stir until well mixed.
  • In another bowl, whisk together the eggs, applesauce, erythritol, and vanilla. Pour this mixture into the dry ingredients and mix until it forms a dough. If it's too dry, add a little water or more applesauce.
  • Add enough oil to cover the bottom of a frying pan (about 1/4 inch deep) and heat over medium. Test the oil by dropping a small piece of dough in; it should sizzle.
  • Scoop about a tablespoon of dough and gently drop it into the hot oil. Fry for 2-3 minutes on each side, until golden brown. Avoid overcrowding the pan.
  • Once golden, remove the fritters and let them drain on paper towels. Sprinkle with extra erythritol if desired.
  • Serve right away for the best flavor. Add sugar-free syrup or whipped cream if desired.
