- 4 boneless, skinless chicken breasts
- 1/2 cup cream cheese softened
- 1/4 cup shredded cheddar cheese
- 1/4 cup chopped green onions (or fresh herbs like chives or parsley)
- Salt and pepper to taste
- 8-10 strips of bacon (enough to wrap each chicken breast)
Preheat your oven to 375°F (190°C). Line a baking dish or sheet pan with parchment paper for easy cleanup.
In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and chopped green onions. Mix until everything is well-blended and set aside.
Using a sharp knife, slice each chicken breast horizontally to create a pocket in the center (be careful not to cut all the way through). Season the inside and outside of each breast with salt and pepper.
Spoon about 1-2 tablespoons of the cheese filling into the pocket of each chicken breast. Press the edges gently to seal in the filling.
