Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1/2 cup cream cheese softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (or fresh herbs like chives or parsley)
  • Salt and pepper to taste
  • 8-10 strips of bacon (enough to wrap each chicken breast)

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking dish or sheet pan with parchment paper for easy cleanup.
  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and chopped green onions. Mix until everything is well-blended and set aside.
  • Using a sharp knife, slice each chicken breast horizontally to create a pocket in the center (be careful not to cut all the way through). Season the inside and outside of each breast with salt and pepper.
  • Spoon about 1-2 tablespoons of the cheese filling into the pocket of each chicken breast. Press the edges gently to seal in the filling.
  • Wrap each stuffed chicken breast with 2-3 slices of bacon, covering the entire breast. Secure the bacon with toothpicks if necessary to keep it in place.
  • Place the bacon-wrapped chicken breasts on the prepared baking sheet. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the bacon is crispy.
  • If you want extra-crispy bacon, turn on the broiler for the last 2-3 minutes, keeping a close eye to prevent burning.
  • Remove the toothpicks (if used) and serve the chicken hot. Pair with a side of steamed veggies or a fresh salad for a complete meal.
