Ingredients
  

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 2 large eggs
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 12 slices bacon
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  • In a large bowl, combine the ground beef, ground pork, onion, garlic, almond flour, parmesan, eggs, Worcestershire sauce, thyme, paprika, salt, and pepper. Mix until well combined.
  • Shape the meat mixture into a loaf on the prepared baking sheet or loaf pan.
  • Lay the bacon slices over the top of the meatloaf, wrapping them around and tucking the ends underneath.
  • Bake in the preheated oven for 50-60 minutes or until the internal temperature reaches 160°F (71°C) and the bacon is golden and crispy.
  • Let the meatloaf rest for 10 minutes before slicing. Serve with keto-friendly sides like cauliflower mash or steamed vegetables.
