Ingredients
  

For the Beef Stroganoff

  • 1 lb beef sirloin or ribeye, thinly sliced
  • 1/2 onion sliced
  • 2 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1 tbsp butter
  • Salt, pepper, and paprika, to taste

For Serving

  • Cauliflower rice or zucchini noodles

Instructions
 

  • Heat butter in a skillet and sear the beef until browned. Remove and set aside.
  • Sauté onions and garlic in the same skillet until softened. Add mushrooms and cook until browned.
  • Pour in beef broth and bring to a simmer. Add sour cream and let the sauce thicken.
  • Return the beef to the skillet and stir until coated with the sauce. Simmer until the beef is cooked through.
  • Serve hot over cauliflower rice or zucchini noodles.
