For the Beef Stroganoff
- 1 lb beef sirloin or ribeye, thinly sliced
- 1/2 onion sliced
- 2 cloves garlic minced
- 8 oz mushrooms sliced
- 1 cup beef broth
- 1/2 cup sour cream
- 1 tbsp butter
- Salt, pepper, and paprika, to taste
For Serving
- Cauliflower rice or zucchini noodles
Heat butter in a skillet and sear the beef until browned. Remove and set aside.
Sauté onions and garlic in the same skillet until softened. Add mushrooms and cook until browned.
Pour in beef broth and bring to a simmer. Add sour cream and let the sauce thicken.
Return the beef to the skillet and stir until coated with the sauce. Simmer until the beef is cooked through.
Serve hot over cauliflower rice or zucchini noodles.
