- 4 cups keto bread cubed
- 1 cup mixed berries (blueberries, raspberries, etc.)
- 3 large eggs
- 1 cup heavy cream
- 1/2 cup unsweetened almond milk
- 1/4 cup powdered erythritol (or sweetener of choice)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon optional
Preheat oven to 300°F. Spread bread cubes on a baking sheet and toast for about 10 minutes to dry them slightly.
In a mixing bowl, whisk together eggs, heavy cream, almond milk, erythritol, vanilla extract, and cinnamon until smooth
Grease an 8x8 baking dish. Layer half the bread cubes, sprinkle half the berries, then add remaining bread cubes and berries.
Pour custard mixture over the bread and berries, pressing down gently. Let sit for 10 minutes to soak.
Increase oven temperature to 350°F. Bake for 30-35 minutes until custard is set and top is golden.
