Ingredients
  

  • 4 cups keto bread cubed
  • 1 cup mixed berries  (blueberries, raspberries, etc.)
  • 3 large eggs
  • 1 cup heavy cream
  • 1/2 cup unsweetened almond milk
  • 1/4 cup powdered erythritol (or sweetener of choice)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon optional

Instructions
 

  • Preheat oven to 300°F. Spread bread cubes on a baking sheet and toast for about 10 minutes to dry them slightly.
  • In a mixing bowl, whisk together eggs, heavy cream, almond milk, erythritol, vanilla extract, and cinnamon until smooth
  • Grease an 8x8 baking dish. Layer half the bread cubes, sprinkle half the berries, then add remaining bread cubes and berries.
  • Pour custard mixture over the bread and berries, pressing down gently. Let sit for 10 minutes to soak.
  • Increase oven temperature to 350°F. Bake for 30-35 minutes until custard is set and top is golden.
  • Serve warm, and enjoy your keto-friendly dessert!
