- 2 cups blueberries
- 1 tbsp lemon juice
- 2 tbsp powdered erythritol
- 1 tsp xanthan gum optional
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup butter melted
- 1/4 cup powdered erythritol
- 1 egg
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
Preheat oven to 350°F (175°C). Grease an 8x8 baking dish.
In a bowl, mix blueberries, lemon juice, erythritol, and xanthan gum. Pour into the baking dish.
In a separate bowl, mix almond flour, coconut flour, erythritol, and baking powder.
Stir in melted butter, egg, and vanilla until a dough forms.
