Ingredients
  

  • 2 cups blueberries
  • 1 tbsp lemon juice
  • 2 tbsp powdered erythritol
  • 1 tsp xanthan gum optional
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup butter melted
  • 1/4 cup powdered erythritol
  • 1 egg
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8x8 baking dish.
  • In a bowl, mix blueberries, lemon juice, erythritol, and xanthan gum. Pour into the baking dish.
  • In a separate bowl, mix almond flour, coconut flour, erythritol, and baking powder.
  • Stir in melted butter, egg, and vanilla until a dough forms.
  • Drop spoonfuls of topping over the blueberries.
  • Bake for 28–35 minutes until golden and bubbling.
  • Let cool 10 minutes. Serve warm or chilled.
