  • Chicken thighs 1 lb
  • Broccoli 2 cups
  • Olive oil 2 tbsp
  • Soy sauce 2 tbsp
  • Bourbon 1 tbsp
  • Apple cider vinegar 1 tbsp
  • Erythritol 1 tbsp
  • Garlic powder 1 tsp
  • Ginger 1 tsp
  • Xanthan gum 1/2 tsp

Instructions
 

  • Heat oil in a skillet and sauté broccoli for 5-7 minutes. Set aside.
  • Sear diced chicken until golden and fully cooked.
  • Whisk soy sauce, bourbon, vinegar, sweetener, garlic powder, ginger, and xanthan gum in a bowl.
  • Pour sauce over chicken and simmer until thickened.
  • Add broccoli back to the skillet and toss to coat.
