- 2 cups broccoli, finely chopped
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour
- 2 eggs, beaten
- 1 tsp garlic powder
- Salt & pepper to taste
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
If using frozen broccoli, thaw and squeeze out excess water. Finely chop broccoli.
In a mixing bowl, combine broccoli, cheddar cheese, Parmesan cheese, almond flour, eggs, garlic powder, salt, and pepper. Mix well.
Use a spoon or cookie scoop to form the mixture into bite-sized balls. Place on the prepared baking sheet.
Bake for 20-25 minutes or until golden brown.
Allow to cool slightly before serving.
