Ingredients
  

  • 4 cups broccoli chopped
  • 2 cups cheddar cheese shredded
  • 1 cup heavy cream
  • 3 cups chicken broth
  • 2 tablespoons butter
  • 1 small onion chopped
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions
 

  • Melt butter in a large pot and sauté chopped onions until soft. Add minced garlic and cook for 30 seconds.
  • Pour in chicken broth and add chopped broccoli. Simmer for 10-12 minutes until tender.
  • Use an immersion blender to blend the soup (optional).
  • Reduce heat and stir in heavy cream. Heat through without boiling.
  • Gradually add shredded cheddar cheese, stirring constantly until smooth.
  • Season with salt and pepper, and serve warm.
