Ingredients
  

  • 2 cups shredded cooked chicken
  • 4 oz cream cheese softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup buffalo sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 6-8 keto tortillas
  • 2 tbsp butter melted

Instructions
 

  • Preheat the oven to 375°F (190°C) or set the air fryer to 375°F if using.
  • In a mixing bowl, combine shredded chicken, cream cheese, cheddar cheese, mozzarella cheese, buffalo sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until everything is evenly combined.
  • Lay out the keto tortillas and evenly distribute the buffalo chicken mixture onto each one. Spread the mixture in a thin line across the lower third of each tortilla.
  • Roll each tortilla tightly around the filling to form taquitos. Place them seam-side down on a lined baking sheet or air fryer basket.
  • Brush the tops of the taquitos with melted butter for extra crispiness.
  • Baking option: Bake for 15-20 minutes until golden and crispy.
  • Air fryer option: Cook at 375°F for 8-10 minutes, flipping halfway through.
  • Remove and let cool for a couple of minutes before serving. Enjoy with ranch dressing or blue cheese dip!
