- 1 lb ground beef
- 1 medium onion chopped
- 2 cups cabbage chopped
- 1 14.5 oz can diced tomatoes
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
Heat olive oil in a large soup pot. Add the ground beef and cook until browned, breaking it up with a spoon.
Add the chopped onion and garlic powder. Cook for 3-4 minutes until the onion becomes translucent.
Stir in tomato paste and cook for 2 minutes.
Add beef broth and diced tomatoes to the pot. Stir and bring to a boil.
Reduce the heat to low and simmer for 20 minutes.
Add chopped cabbage and stir. Simmer for 10-15 minutes until cabbage is tender.
